Roast Pumpkin & Chick Peas with HFR’s Special Sauce

Please accept my apology for the break in posts, but I’ve been busy in the kitchen. I guarantee you, the recipe below for my Special Sauce is worth the wait. This sweet/smokey/creamy /tart dressing will have you licking the bowl, spoon and whatever else it comes in contact with. The key ingredient in this dressing is SMOKED PAPRIKA, hence the smokey flavor. The sweetness comes from WHITE BALSAMIC VINEGAR, which is another favorite pantry staple. Typically, when making salad dressing, I use fresh lemon juice and sweeten it with a bit of honey, but WBV is a great sweet alternative.

HFR’s Special Sauce: AKA Smoked Paprika-Tahini Dressing

makes approximately 1 cup

1/3 cup tahini

1/3 cup white balsamic vinegar

1/3 cup freshly squeezed lemon juice

1-2 tablespoons water (to thin if necessary)

Ground Cumin, 1/2 teaspoon

Cayenne, 1/2 teaspoon

Salt, 1/2 teaspoon

Sweet Paprika, 1/2 teaspoon

Smoked Paprika, 1/2 teaspoon (KEY INGREDIENT)

1 glove fresh garlic, grated on a microplane

Black Pepper, to taste

Combine all ingredients in a bowl or blender until smooth and creamy. Store in the fridge for up to a week (the dressing won’t go bad by any means, but the longer it sits in the fridge, the less “fresh” the lemon juice will taste). Let me know what you think. I love this stuff!

    Yum! The next time you and T. come west, you should try to make it up to Point Reyes. It’s foody heaven……and great hiking, biking, kayaking. I just love it up there. XX, Kate
