Breakfast Parfait

With berries coming into season, I love eating them for breakfast, snacks and dessert. This Mason jar parfait is a fun way to enjoy a wholesome breakfast at home or on the go. Berries are rich in natural pigment antioxidants, so eat ‘em up! The protein in yogurt and muesli perfectly counters the natural sugar content in berries.

Breakfast Parfait Recipe

Serves 1

¾ cup Bob’s Red Mill Muesli
¾ cup plain, organic yogurt
¼ cup blueberries
¼ cup raspberries
¼ cup blackberries
¼ strawberries, sliced


  1. Add equal parts muesli and yogurt in a small container, cover and refrigerate over night.
  2. In a small Mason jar, or other clear glass container, add blueberries then a few spoonfuls of the muesli-yogurt mixture on top. Then, lay down the raspberries, more muesli-yogurt and continue layering fruit and yogurt until you reach the top.

Parfaits aren’t just for breakfast! For more of a sophisticated dessert, you can swap out the Mason jar for a beautiful glass bowl or cocktail glass. To the yogurt, add honey and vanilla extract to sweeten. You can also toss the berries in honey to play up their natural sweetness.

If you want more of a crunch, you can swap out granola for the muesli for either breakfast or dessert. Do be wary of the ingredients in store-bought granolas, because they are more often than not loaded with added sugar. Try and find brands sweetened by only the dried fruits they contain. If one serving (1/2 to 1 cup) contains more than 12 grams of sugar, skip it. Some people are turned off by the fat content in granola, but if it’s from the nuts and seeds and or coconut/ coconut oil, I wouldn’t worry about it; these are all “good for you” fats. And lastly, just because it’s labeled “organic”, doesn’t mean it’s healthy!

What’s the difference between muesli and granola? Muesli is raw (made of: oats, seeds, nuts and dried fruits). Granola is more like a cookie; it is essentially baked muesli with the addition of sugar, butter/ oil.
